- Yellow mustard seeds (also known as white mustard seeds, Sinapis alba) are small, round seeds with a pale yellow to light beige colour. They have a mild, tangy flavour with a slight earthy note and less pungency compared to brown or black mustard seeds. These seeds are widely used in spice blends, pickling, salad dressings, and condiment production such as yellow mustard paste.
- Native to the Mediterranean region, yellow mustard seeds are valued not only for their culinary uses but also for their functional properties—acting as emulsifiers and natural preservatives in food processing. When ground and mixed with liquid, they release a gentle heat and distinct aroma due to natural compounds like sinalbin.
